Card Tricks

My uncle does a mind trick. He has me take a card from the deck memorize it and then put it back in. Then he shuffles and then he lets me shuffle. Then he takes the deck and does something where he is taking a few cards out of the middle at a time and placing them on top. Then I choose a number between 1 and 10. What number I pick he puts that number of cards between my index and middle finger tells me to hold on to them and then hits the deck until only one is left the one i chose. How does that work?

Well its a pretty straight up question, I just want to have a fun trick or two to be able to perform in front of people any time and anywhere with no setup or gimmicks.

Anyone know of any?
Ive seen David Blaine, very impressive, but its not like anyone is expecting to learn any of that any time soon.
